There were so many choices in his shop, but the staff handed me the Tolbiac when I asked for the most excellent version of it.

It was fantastic while piping hot, and still better than any I've ever tried after it has cooled.
Crusty, heavy, chewy and very tasty. I couldn't stop pinching and biting.
Seriously, this Eric man's got yeast and magic running through his veins.
